XL PALEO CHRISTMAS CAKE
OVEN TEMP/COOKING TIME: 150°C / 1.5 - 2 hours
STORAGE: Store in the fridge for several days, or freeze for up to 3 months.

1 Packet UGG Foods Fruit & Seed Loaf Mix & 1 Packet Chia Seed Muffins
1 Ugg foods chia muffin mix
1 Ugg foods fruit and seed loaf mix
You Will Need To Add:
8 large free range eggs
400g dried fruit of your choice chopped
(optional - soak dried fruit in a little brandy for a few hours or other Xmas tipple )
200g chopped whole nuts to decorate
Zest of 2 lemons and 2 oranges
150ml lemon/ orange juice/water
3 tbsp mild light olive oil
2 large peeled and chopped apples.
Spices - 1 tbsp mixed spice, 1 tbsp cinnamon, 1tbsp ginger ( or spices to your own taste )
Preheat oven to 140 degrees C fan assisted or gas mark 3
Grease and line a 9 “ cake tin.
Beat all of the wet ingredients together with the eggs.
In a large bowl add wet ingredients to the 2 Ugg mixes, and remaining ingredients including the zest and peeled and chopped apples.
Pour into greased and lined cake tin.
Decorate with whole nuts (optional) cover surface with foil to prevent burn.
To stop surface overlooking and bake 1 hour 20mins. Turn off oven and leave in warm oven another couple of hours to firm up and dry a little.
Optional - Glaze with a warmed, low sugar apricot jam.
Keep in fridge for 3-4 weeks or freeze for up to 3 months.
