1 large cup juicy raisins (preferably soaked for a few hours in rum)
1 cup chopped nuts
2 tbsp mixed seeds
Chopped figs, apricots or prunes
Make up the luxury version of the Ugg chia seed mix according to the pack. Add all of the other ingredients and spoon into muffin cases.
For a mini pudding thicken the mix by adding ground up shredded coconut and use an ice -cream scoop to load a baking tray covered in baking parchment.
Decorate with chopped nuts and bake for 20-25 minutes until golden.
For a Christmassy look decorate with creamed coconut out of a decorating can or icing bag (melt the coconut butter by placing the plastic container in hot water for 10 mins) thickened with ground up shredded coconut to make icing.
