100g coconut oil
2 tbsp sweetener of your choice (xylitol, erythritol, or honey etc)
1 heaped tbsp ground ginger
Rinsed and chopped stem ginger (rinsed thoroughly)
1 large free range egg
Pre-heat oven to 140 degrees fan assisted/ 285 F/ gas mark 3 Rub the slid coconut oil into the Ugg foods bread mix.
Add sweetener, ground ginger and stem ginger.
Beat egg and mix well.
Kneed with hands to a stiff mix.
Roll dough between 2 pieces of parchment, cut shapes and place on baking tray lined with greaseproof paper.
Bake until golden approx 20 minutes, turn cookies after 15 mins.
Cool and keep in fridge for up to a week or freezer 3 months.
