Place the muffin mix in a food processor and blitz for 5 minutes until itbecomes dark and sticky. Add 1 cup of mixed nuts and 1 cup of mixed seeds and pulse lightly, a few times, until they are very roughly chopped. Spread mixture on a lined baking sheet leaving any large pieces of the mix intact. Bake for approx 25 to 30 minutes stirring with a spoon every 5minutes or so as the mixture browns. It will form granola-type “clumps” when it is mixed.Leave to cool completely (it will really crispen up) and store in glass jar. Serve with cold nut milk, fresh seasonal berries & extra nuts & seeds.
