HIGH FIBRE GINGER HEALTH BARS
UGG Product to use (and purchase below) : Ugg Foods Coconut Muffin Mix
YOU WILL NEED TO ADD (Ingredients not included):
½ pack Ugg foods coconut muffin mix
200g ground flax
150g chopped prunes
100g coconut oil
1 medium free-range egg
3 tbsp ground ginger
3-4 rinsed and chopped pieces of stem ginger
Pre- heat oven to 140 degrees C fan assisted / gas mark 3 ( medium low temp )
Grease and line an 8x10” brownie tin. Mix all of the dry ingredients in a large bowl.
Rub the solid coconut oil into the dry ingredients to make fine crumb consistency.
Combine with the beaten egg. Mix well and then use your hands to make a firm dough.
Press into the brownie tin and score the bars with a knife.
Bake 25 minutes until golden brown.
Bars will keep for several days in a cool place or 3 months in the freezer.
