Chocolate Beetroot Cake

UGG Product to use (and purchase below)  : 135g Chocolate Chia Muffin Mix

YOU WILL NEED TO ADD (Ingredients not included):

250g cooked beetroot

200g dark chocolate, chopped

4 tbsp hot espresso coffee

175ml olive oil

2 tbsp cocoa

5 eggs, separated

175g xylitol

METHOD

Grease a 20cm loose bottomed cake tin. Blend the beetroot to a fine puree. Melt the chocolate over hot water and add the espresso. Remove from the heat and add the oil. Allow to cool slightly then stir in the egg yolks as quickly as possible, then mix in the beetroot puree. Beat the egg whites until stiff then fold in the xylitol. Gently fold the egg white mixture into the chocolate mixture with a large metal spoon and then fold in the dry ingredients. Transfer to tin & bake for 45 minutes checking regularly.
